In the book New Moon he cuts it when he becomes a wolf. In Eclipse he begins to let it grow out because he thinks Bella likes/liked it better longer. It also helped her differentiate between him and the other members of tha pack when they were in wolf form because he was shaggier.

I think they look good together and who wouldn't like the fact that the fantasy of Edward and Bella being eternally in love in Twilight crosses in to our real world. I think Kristen's acting abilities are underrated. She portrayed an unhappy transient in a situation she was none too thrilled with. I imagine as her character evolves, as it does in the books, she'll show us her abilities more. have a little faith.
